  • This is for pie makers that want to try new flavors/ingredients/ideas in pie making

    Unfortunately, I am an old dog pie maker that is uncomfortable with air brushing, weird new flavors, etc.
  • I am obsessed with this cookbook! As other reviewers have said, the pictures are gorgeous! There are pictures of every pie and very detailed, clear instructions that anyone can follow regardless of your pie baking expertise. Paul and Chris are so creative with their updated versions of pie! Yes, everyone knows pie, but I promise you , you have not seen pies like this before! I love reading the special notes and the stories behind the inspiration for each pie. Even though Paul and Chris have won over 500 awards for baking, including Best of Show in the Amateur division of the National Pie Championships, do not be intimidated by this book! Paul and Chris are two super nice, funny, knowlegable and relatable guys who just want to share some pie with you. I have probably made less than 10 pies from scratch in my entire life and even I was easily able to re-create the South Seas Coconut Deluxe you see in the picture. I am not kidding when I say that this pie was DIVINE and I had nothing but rave reviews from family and friends. It was creamy, coconutty, with just enough dulche de leche to lend that oh-so-craveable combination of salty and sweet. They say it is reminiscent of a certain girl scout cookie but for me it was even better. I was a little afraid that it would be too sweet for my taste actually but the flavors and textures were very well balanced. Now, I have no desire to enter any pie baking competitions but this book has renewed my interest in baking again much to the delight of my family. -) If you're wondering how innovative can they be with pie, check out the names of just a few of them... There is Clemeza's Cannoli pie ( gorgeous!!), Guavaberry Apple, a Strawberry Margarita pie (with a salted rim!) , an elegant Bellini pie that calls for a cup of champagne, and simply the cutest pie I've ever laid eyes on, the Lovey Dovey pie on page 241 but I won't give away the adorable secret of that one. You'll just have to get the book for yourself. Paul and Chris give some advice in the beginning of their book on how to use their cookbook and I highly recommend reading through these beginning pages first. Then read through your chosen recipe thoroughly before you begin. The detailed notes and explanations will help you feel that they are right there helping you along every step of the way. If you are wondering whether or not to get this book , trust me when I say that you cannot find these pies anywhere else! They are impresseive to look at, have grown-up elevated, modern flavors and are fun to make!
  • I pre-ordered this book to give to my BIL for his birthday, thinking that he would enjoy some of the very cool pie projects presented in this book. Lots of the pie recipes are right up his alley as he loves so many of the flavor elements in these pies-- maple syrup, peanut butter, chocolate, cocktails. For sure you could go crazy and recreate some of these masterpiece pies, but there are also some simpler creations, and SO many practical tips and tricks to give you new ways to up your pie game! The photographs are out of this world, the writing is crisp and clear (and exciting!) Can't wait to see what my BIL does with the book, and might just need another copy for myself!
  • OMG I have just won the Grand Prize (the “golden whisk”) at my kids’ school baking contest. The PIE OF THE TIGER was incredible. The school mascot is a tiger and I ordered a tiger stencil for the top. This pie DID. NOT. DISAPPOINT. OMG, it is the absolutely most delicious pie I have ever had in my almost 50 years! I also learned a “golden nugget” - how to stabilize real whipped cream so that it lasts more than a couple of hours without melting! Worth the price of the book alone! Looking forward to diving into more pies - this book was recommended to me by a friend who owns her own bakery business. She knows the authors and said that the book would be incredible. She was RIGHT!
  • i love the flavor combinations and fresh ideas in "the new pie" - thumbing through always gets me ready to create something delicious. their pie crust really will change your life! (but i suggest starting with the fizzy root beer "float".)

    also, the thought down to every detail of the book design are inspired... recipes w both weight and volume measurements! a fully sourced equipment list with everything but a bar code! but i must say, having difficulty levels on the recipes is the best part bc i know what i'm getting myself into before i start lol.
  • Bought this book last week and have read it from cover to cover. I must say amazing pictures, clear and easy to follow directions ( a must in my opinion), and great stories behind the inspiration for some really unique pie flavors. I originally thought chocolate coated potato sticks on pie was nutty, but having now tried it for myself I think it was a stroke of genius. This is not your mom/grandma’s pie book. No “typical” pies. These are next level pies in terms of flavors and ingredients. Live a little and try something different.
  • I have never baked a pie. Never. But this book with it's alluring pies like the "1651 Richmond" (Golden Girls inspired), the "Pittsburgh Proud" (add fries) and so, so many others, has made me determined to bake a pie. The book is complete with ratings for Ingredients (ease of finding), Equipment (Do I have this in my kitchen?), and Construction (ease of assembly). This book truly lives up to its name! I'm in love!
  • I hope I can review again once I have tried out some recipes, but for now I'm just enjoying the beauty of these pies and the easy reading that makes me feel like I know the authors (your first date = #relationship goals!) I have always loved to bake but pies (dough!) haven't really been my thing - I think mostly because they didn't appeal to me in the same way as cakes and cookies. The beautiful photos and the easy way the recipes are laid out in the book make me want to invest some time to get on the other side of my pie-making aversion.
